Prep and cook time:  45 minutes     Serves 4

1    package polenta (made from organic corn)
2    tablespoons avocado oil
1    cup sugar-free marinara or pizza sauce
½   teaspoon harissa, curry, or Jamaican jerk spice
salt and pepper to taste

Preheat oven to 450 degrees. Cut polenta into thick slices (the size and shape of steak fries). Toss with avocado oil, salt, pepper, and other spice. Roast in oven for 40 minutes. Serve with marinara sauce for dipping.
