Prep and cook time: 35 minutes Serves 4
2 cups stock or water1 cup dry roasted millet½ cup crushed cashews3 tablespoons canned organic pumpkin1 teaspoon organic curry powder1 teaspoon grated ginger1 teaspoon sea salt
Boil the stock or water in a pot. Add all ingredients and bring to a boil. Reduce heat to low and simmer for 20-25 minutes, or until all the liquid is absorbed. Fluff with a fork and serve warm.
